Jaime's Cheese Skirt Smash Burgers

Ingredients:
Burger Blend:
3 lbs. Ground Chuck
1 lbs. Brisket
1 lbs. Bacon
Buns of your choice), buttered
Suggested: sourdough or brioche
1 tsp Garlic Powder
Shredded Cheese, to taste
Salt and Pepper, to taste
Condiments of your choice
Basting Cover
Directions:
Preheat your
Blue Rhino Razor Griddle
on high and then coat with vegetable oil.
Take 1/4 lb of burger blend and shape into a small ball (or two patties if you want to make a double). Continue until all burger blend is used.
Add each ball to the Razor and immediate press flat with a spatula or
cast-iron press
or a
Smash-A-Burger Griddle Press
.
Season patty with salt, pepper and garlic power.
Gill for two (2) minutes, then flip.
Place your buttered buns on the cooler side of the griddle.
Cover each patty with a hefty amount of shredded cheese. Make sure the cheese covers both patty and the and surrounding area.
With a
basting cover
, cover and grill for another 1-2 minutes.
Pro tip: a squeeze of water under the cover will help everything steam.
Remove everything from the griddle and build your burger with your favorite condiments. Feel free to fold over your crispy cheese skirt into the sandwich or simply let it hang out the sides. Enjoy!
