Ingredients:

Zucchini
1 bunch
Asparagus
1
Yellow Bell Pepper
1
Red Bell Pepper
Olive Oil
Salt, to taste
Pepper, to taste
Toothpicks
Directions:
Preheat grill to medium-high.
Using a vegetable peeler, shave the zucchini into long thin strips.
Cut bell peppers into slices.
Trim asparagus ends.
Lay out one zucchini strip. Place 3-4 yellow and red bell peppers and 2-4 pieces of asparagus in the middle of the zucchini strip.
Wrap zucchini strip around the peppers and asparagus. Secure with a toothpick.
Drizzle olive oil over bundle and season with salt and pepper.
Remove the toothpicks and place bundle on the cooking grid.
Grill for 3-5 minutes each side. Moving the pieces during cooking to ensure even browning.
Remove from the grill.
Serve and enjoy.
