Ingredients:
3 1/2 lb Baby Back Ribs (2 racks)
6 cloves Garlic (minced)
1/2 cup Soy Sauce
1/2 cup Honey
2 1/2 tsp Rice Vinegar
1/2 tsp Sesame Oil
4 tbsp Ketchup
1/4 tsp Red Pepper Flakes
1 bunch Green Onions (sliced thin on a bias, for garnish, optional)
2 tsp Toasted Sesame Seeds (or black sesame seeds, for garnish, optional)
Rub:
2 tsp Salt
1 tsp Ground Black Pepper
1 tbsp Paprika
1 tbsp Brown Sugar
1/4 tsp Cayenne Pepper
2 tsp Garlic Powder
2 tsp Onion Powder
Directions:
Preheat grill to 300°F and set for indirect grilling or preheat smoker to 250ºF.
Remove membrane from ribs.
Mix dry rub in a bowl.
Apply rub to both sides of the ribs.
Wrap ribs tightly with aluminum foil or butcher paper.
Place on the grill or smoker for 2.5 hours.
In a medium bowl, combine garlic, soy sauce, honey, rice vinegar, sesame oil, ketchup, and red pepper flakes. Whisk sauce until fully incorporated.
After 2.5 hours, remove the ribs and remove the foil/butcher paper. Brush glaze on the ribs.
Place back on the grill/smoker. Apply more glaze every 10 minutes, and cook until ribs reach an internal temperature of 165ºF.
Carefully remove from the grill/smoker and let rest for 3 minutes.
Slice ribs and garnish with sesame seeds and green onions.
Serve and enjoy.
