Ingredients:
(1) 2-3 lbs Schweinshaxe (Pork Knuckle)
1 tbsp Caraways Seeds
Salt, to taste
Pepper, to taste
1 bottle German Dark Larger
Roasting Pan
Directions:
Preheat grill to 350 F and prepare for indirect grilling.
Score the pork knuckle.
Place the pork knuckle in the roasting pan so the pork knuckle is standing ("foot" end is facing upwards).
Pour some beer over the pork knuckle. Season with salt, pepper and caraway seeds.
Place rosting pan on the cooking grid for indirect grilling.
Make sure to marinate with beer every 45 - 60 minutes. Grill for 4 hours or the internal temperature reaches 200 F. If the skin is browning too fast, tent with aluminum foil.
Remove the pork knuckle from the roasting pan and place directly on the grill above the flames for 10- 15 minutes. Until the skin gets crispy and puffy.
Remove form the grill and let rest for a couple of minutes.
Serve and enjoy.
