Ingredients:
1-1/2 C Seeded and chopped tomato
3 Scallions, thinly sliced
1 Jalapenos, seeded and finely diced
1/2 medium Red onion, chopped
2 medium Red bell pepper, charred on the grill, peeled and chopped
2 stalks Celery with leaves, chopped
1 Clove Garlic, minced
2 (15 ounce) cans Black-eyed peas
4 T Red wine vinegar
2 t Olive oil
1 t Salt
1 t Black pepper
4 C Torn young dandelion greens (stems removed)
Directions:
Toss to combine all ingredients.
Cover and refrigerate at least 4 hours.
Remove from refrigerator let come to room temperature.
Add torn dandelion greens and toss; taste and adjust seasoning with salt and pepper before serving.
