Grilled Kartoffelpuffer (German Potato Pancakes)

Ingredients:
2 lbs Potatoes (about 4 medium or 6 small russets, or any variety of starchy potato)
Note: Potatoes must me RAW, not cooked.
2 Large Eggs
1/4 cup All-purpose Flour
1 Small Onion
1 tsp Salt, to taste
Pepper, to taste
Nutmeg, to taste
Vegetable Oil or Bacon Lard
Directions:
Wash, peel and grate the potatoes (finely grated).
Using a dishcloth or cheesecloth, remove as much water as possible from the potatoes.
In a large bowl combine all the ingredients. Mix togther throughly. Note: will need to use the mixture quickly.
Using the grill's side burner (or preheat the grill to high), heat a non-stick pan add 2 tablespoons of oil to the bottom and heat to medium high.
lace 1/3 to 1/2 cup of mixture into a hot pan and flaten with a spoon.
Fry both sides of the pancakes for 3-5 minutesm or until golden brown.
Remove and quickly dry on papertowels.
Serve and enjoy.
