Summertime Grilled Shrimp Cocktail

Ingredients:
8 16/20 Shrimp Peeled, tail on
1 tsp Olive Oil
1/8 tsp Operation BBQ Relief Texas SPG Rub
1/4 cup Cocktail Sauce
1 Lemon, but in half
1 oz Bloody Mary Mix
1/4 tsp Cilantro, chopped
1 tsp Tomato, diced
1 tsp Fresh Avocado, diced
1/2 tsp Cilantro, chopped
Directions:
Preheat grill to medium-high.
Coat the shrimp with olive oil and season with the Operation BBQ Relief Texas SPG Rub.
Place the shrimp on the skewers.
Place the skewers on the grill.
Grill until the shrimp are white and have nice grill marks on both sides, about 2-3 minutes each side.
While the shrimp are cooking, add the cocktail sauce to a bowl, add the fresh lemon juice (from 1/2 of the lemon), bloody mary mix and fresh chopped cilantro. Mix well.
Remove the shrimp from the grill and remove from the skewers and set aside.
Arrange the shrimp, fanned out on a plate.
Place the cocktail sauce in a shot glass and place on the plate.
Garnish the plate with a half of a lemon.
Sprinkle the diced tomato, diced avocado and chopped cilantro over the shrimp.
Serve and enjoy.
