Ingredients:
1 Loaf of Poundcake
1 Fresh Pineapple
1/4 cup Granulated Sugar
1/2 cup Whipped Cream
1/4 cup Honey
Directions:
Preheat grill to medium.
Place the pound cake on a cutting board. Using a 4 inch disc as a cutting guide, cut a piece of pound cake slightly wider than the disc.
Trim the pound cake round using the disk as a guide.
Turn the cake on its side. Slice the cake into half inch thick slices and set 2 cake slices to the side.
Place the pineapple on the cutting board. Cut the top and the bottom off of the pineapple, ensuring the knife is straight.
Stand the pineapple upright and using the same disk trim the edges of the pineapple off.
Lay the pineapple on its side and cut half inch thick slices, removing the core. Set 2 pineapple slices off to the side.
Coat the pineapple with granulated sugar on both sides and place on the cooking grids.
Place the poundcake slices on the grill to achieve grill marks on both sides.
Cook the pineapple until there are grill marks on both sides and it is tender to the touch.
Cook the poundcake slices until there are grill marks on both sides.
Remove from the grill and allow to cool.
Place one slice of grilled pound cake on a plate and top with whipped cream.
Gently place the grilled pineapple slice on top of the whipped cream.
Drizzle the pineapple with honey.
Place the second piece of grilled pound cake on top of the pineapple.
Top with whipped cream and place the last slice of grilled pineapple. Top with whipped cream.
Drizzle honey over the top of the cake, allowing the honey to drip down the sides.
Serve and enjoy.
